Loaded Vegan Pizza

Ingredients:
- 1 lb pizza dough (Manini’s)
- 4 oz vegan chorizo (Abbot’s), sliced
- 1 cup fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 2 tbsp balsamic glaze
- 1 cup mushrooms, sliced
- 1/4 cup black olives, sliced
- 1/2 cup pizza sauce
- 1/2 cup pineapple chunks
- 1 1/2 cups shredded vegan cheese (Good Planet Foods)
Instructions
1. Preheat your oven to 475°F and prepare a pizza stone or baking sheet.
2. Roll out the pizza dough on a floured surface to your desired thickness, then transfer it to the prepared baking sheet.
3. Spread the pizza sauce evenly over the dough, leaving a small border around the edges.
4. Distribute the vegan chorizo slices, chopped spinach, halved cherry tomatoes, sliced mushrooms, black olives, and pineapple chunks evenly over the sauce.
5. Sprinkle the shredded vegan cheese generously on top of all the toppings.
6. Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is melted.
7. Remove the pizza from the oven and drizzle the balsamic glaze over the top for added flavor.
8. Let the pizza cool for a few minutes before slicing and serving.
