Ingredients:
Sweet Potato and Chickpea Mash for a 1-Year-Old
Ingredients
1 medium purple sweet potato (about 200g), peeled and cubed
1/2 cup cooked chickpeas (about 80g)
1/4 cup oat milk (or more for desired consistency)
1 tablespoon hulled hemp seeds
1 tablespoon nutritional yeast
1/4 teaspoon garlic seasoning (or to taste)
1/4 teaspoon dried herbs (such as thyme or oregano)
Pinch of nutmeg
Pinch of cinnamon
Pinch of cardamom
Instructions
Start by boiling the chickpeas.
In a separate pot, bring water to a boil and add the cubed purple sweet potato. Boil for about 10-15 minutes or until the sweet potato is fork-tender.
Once both the chickpeas and sweet potato are cooked, drain them if necessary and allow them to cool slightly.
In a blender, combine the boiled chickpeas, sweet potato, oat milk, hulled hemp seeds, nutritional yeast, garlic seasoning, dried herbs, nutmeg, cinnamon, and cardamom.
Blend until smooth, adding more oat milk if needed to achieve a creamy consistency suitable for your baby.
Taste and adjust seasonings as necessary, keeping in mind your baby's preferences.
Serve warm, and store any leftovers in an airtight container in the refrigerator for up to 3 days.
Notes
Always ensure that the texture is appropriate for your child’s eating abilities. You can leave it slightly chunky if your baby is ready for more texture.
