Vegan Seafood Roll

Ingredients:


  • 1 cup shredded jackfruit (canned in water, drained and rinsed)

  • 1 cup hearts of palm (canned, drained and chopped)

  • 1/2 cup vegan mayo

  • 1/4 cup bell peppers (finely chopped, any color)

  • 1/4 cup celery (finely chopped)

  • 2 tablespoons roasted seaweed flakes

  • 1 tablespoon fresh dill (or 1 teaspoon dried dill)

  • Dave's Killer Bread (or any vegan bread of choice)

  • 1 tablespoon Dijon mustard

  • 1 teaspoon smoked paprika

  • 1 tablespoon lemon juice (freshly squeezed)

  • 1 teaspoon Old Bay seasoning

  • Salt and pepper to taste

  • 1/2 teaspoon liquid smoke (optional, adjust to taste)

Instructions

  1. Shred the jackfruit and hearts of palm.

  2. Sauté the shredded jackfruit and hearts of palm in vegan butter until heated through.

  3. In a bowl, combine the vegan mayo, Dijon mustard, lemon juice, seaweed flakes, smoked paprika, old bay seasoning, and liquid smoke to create your sauce.

  4. Add the sauce to the pan with the jackfruit and hearts of palm, mixing well.

  5. Toast the slices of Dave's Killer Bread if desired.

  6. Spread the filling onto each slice of bread.

  7. Add the finely chopped bell peppers and celery on top of the filling.

  8. Enjoy your delicious vegan seafood roll!
