Beet Burger

Ingredients:
Beet Pulp: 2 cups
Chickpeas: 1 cup
Rolled Oat Flakes: 1 cup
Almond Butter: 1/4 cup
Olive Oil: 2 tablespoons
Minced Garlic: 2 cloves
Flour: 1/2 cup
Sweet Onion: 1 medium, finely chopped
Pretzel Bun: 1 bun
Vegan Mayo: 1/4 cup
Vegan Cheese: 1 slices
Pickles: 1 sliced in half
Lettuce: 1/4 cup shredded
Ketchup: to taste
Mustard: to taste
Instructions
In a food processor, combine chickpeas, rolled oat flakes, almond butter, olive oil, minced garlic, and chopped sweet onion. Pulse until the mixture is well combined and somewhat smooth.
Transfer the mixture to a large mixing bowl with beet pulp and gradually add the flour, mixing until the mixture holds together and is not too sticky.
Form the mixture into burger patties of your desired size.
Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
While the patties are cooking, prepare your pretzel bun by spreading vegan mayo on the inside.
Once the patties are cooked, place one on the bun and top with a slice of vegan cheese, pickles, shredded lettuce, ketchup, and mustard to taste.
Top with the other half of the bun and serve immediately.
