Vegan Grilled Cheese Volcano Sandwich

Ingredients
1 cup Chili lime jackfruit, shredded
1 cup Heart of palms, chopped
1 cup Credo Vegan Smoky Oat Milk Cheese, spray
1/2 cup Sweet Thai Chili Sauce
1 cup Follow Your Heart mozzarella cheese, shredded
1/2 cup Panko breadcrumbs
1/4 cup Nutritional yeast
2 tablespoons Vegan butter
2 tablespoons Vegan mayo
1/2 cup Celery, finely chopped
2 tablespoons Toasted sesame seeds
4 slices Mountain bread (or your choice of bread)
1/4 cup Green onions, chopped
1/4 cup of agave
Instructions
Prepare the Vegan Crab Mixture: In a blender, combine the jackfruit and heart of palm. Blend until the mixture is slightly broken down. Transfer to a skillet and cook for a few minutes, seasoning as desired with toasted sesame seeds, and nutritional yeast, plus additional seasoning of choice. In a large bowl, combine this cooked mixture with the sweet Thai chili sauce, finely chopped celery, and vegan mayo. Mix well until all ingredients are evenly coated.
Grill the Bread: Heat a skillet over medium heat and add vegan butter. Once melted, place the bread in the skillet. Grill bread for about 3-4 minutes on each side, or until golden brown.
Assemble the Sandwich: On one side of mountain bread, place a generous amount of the vegan crab mixture. Top with Follow Your Heart mozzarella cheese, panko breadcrumbs, credo oatmilk smoky vegan cheese.
Top and Prepare for Grilling: Place another slice of mountain bread on top. Repeat to make additional sandwiches as desired.
Grill the Sandwich: Grill assembled sandwich on both sides until cheese starts to melt down and bread continues to brown, about 4 minutes on each side while pressing down with spatula.
Prepare for Baking: Preheat your oven to 350°F (175°C). Before transferring the sandwich to the oven, drizzle agave on the outer sides of the bread for added sweetness.
Put Sandwich in Oven: Place the grilled sandwich in the preheated oven for about 5-7 minutes, or until heated through and slightly crispy.
Serve: Remove the sandwich from the oven and let it cool for a minute before slicing. Serve hot with extra sweet Thai chili sauce on the side for dipping.
