Vegan Cheesy Shrimp Sandwich

Ingredients:
Vegan Shrimp: 1 cup
Sourdough Bread: 2 slices
Vegan Cheese: 1/2 cup (shredded or sliced)
Vegan Mayo: 2 tablespoons
Vegan Butter: 1 tablespoon
Chesapeake Bay Seasoning: 1 teaspoon
Onion Powder: 1/2 teaspoon
Smoked Paprika: 1/2 teaspoon
Salt: 1/4 teaspoon (or to taste)
Black Pepper: 1/4 teaspoon (or to taste)
Nutritional Yeast: 2 tablespoons
Tabitha Brown's Like Sweet Like Smoky Seasoning: 1 teaspoon
Parsley: 2 tablespoons (fresh, chopped)
Instructions
In a mixing bowl, combine the vegan shrimp with Chesapeake Bay seasoning, onion powder, smoked paprika, salt, black pepper, and Tabitha Brown's seasoning. Mix well and let marinate for about 10 minutes.
Heat a skillet over medium heat and add the vegan butter. Once melted, add the marinated vegan shrimp and sauté for about 5-7 minutes until heated through and slightly crispy.
While the shrimp is cooking, toast the sourdough bread in a toaster or on a skillet until golden brown.
Spread vegan mayo on one side of each slice of toasted sourdough.
Layer the sautéed vegan shrimp on one slice of bread, then sprinkle nutritional yeast and top with vegan cheese.
Add chopped parsley on top of the cheese, then cover with the second slice of bread, mayo side down.
Return the sandwich to the skillet and press down gently. Cook for an additional 2-3 minutes on each side until the bread is crispy and the cheese is melted.
Remove from skillet, cut in half, and serve warm.
