Cajun Shrimp Pasta

Ingredients

  • 8 oz Bucatini Pasta

  • 8 oz Vegan Shrimp

  • 1 cup Follow Your Heart and Chaos Cheese (shredded)

  • 1 cup Mushrooms (sliced)

  • 2 cups Spinach (fresh)

  • 1 cup Tomatoes (diced)

  • 4 cloves Garlic (minced)

  • 1/2 tsp Red Pepper Flakes (adjust to taste)

  • 2 tbsp Chipotle Olive Oil

  • 1/4 cup Parsley (chopped, for garnish)

Instructions

  1. Cook the bucatini pasta according to package instructions until desired texture. Drain and set aside.

  2. In a large skillet, heat the chipotle olive oil over medium heat.

  3. Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1 minute until fragrant.

  4. Add the sliced mushrooms to the skillet and cook for 3-4 minutes until they are softened.

  5. Stir in the diced tomatoes and cook for another 2-3 minutes until they start to break down.

  6. Add the vegan shrimp and spinach to the skillet, cooking until the spinach is wilted and the shrimp are heated through, about 3-4 minutes.

  7. Combine the cooked bucatini pasta with the vegetable and shrimp mixture, tossing to combine.

  8. Sprinkle in the Follow Your Heart and Chaos cheese, stirring until melted and evenly distributed.

  9. Remove from heat and garnish with chopped parsley before serving.
