Carrot Miso Vinaigrette


Ingredients

  • 1 cup Carrot pulp

  • 3 tablespoons Vegan mayo

  • 1/2 cup Celery, finely chopped

  • 1 teaspoon Garlic powder

  • 1/4 cup Hulled hemp seeds

  • 2 leaves Romaine lettuce

  • 2 tablespoons Relish

  • 1/4 cup Onions, finely chopped

  • 1/2 cup Tomatoes, diced

  • 2 tablespoons Carrot miso vinaigrette

Instructions

  1. In a mixing bowl, combine the carrot pulp, vegan mayo, finely chopped celery, garlic powder, hulled hemp seeds, relish, and chopped onions.

  2. Mix the ingredients well until they are evenly combined.

  3. Take the romaine lettuce leaves and lay them flat on a clean surface.

  4. Spoon the carrot tuna mixture onto the center of each lettuce leaf, distributing it evenly.

  5. Add the diced tomatoes and carrot miso vinaigrette to the wrap.

  6. Carefully fold the sides of the lettuce over the filling, then roll it up from the bottom to create a wrap. Or leave it open and eat as taco.

  7. Serve immediately, or refrigerate for a short time before serving if desired.
