New Orleans Red Beans & Rice

Ingredients

  • 1 cup Camellia red beans (dry)

  • 1 cup jasmine rice

  • 1 medium bell pepper, diced

  • 1 medium sweet onion, diced

  • 2 stalks celery, diced

  • 2 links vegan Beyond sausage, sliced

  • 2 tablespoons Earth Balance butter

  • 1 tablespoon shrimp and crab boil seasoning

  • 1 tablespoon Cajun Tony Chachere seasoning

  • 1 teaspoon Old Bay seasoning

  • 1 teaspoon garlic powder

  • 1 teaspoon salt (adjust to taste)

  • 1/2 teaspoon black pepper (adjust to taste)

  • 1 teaspoon sugar

  • 4 cups vegetable broth or water

Instructions

  1. Prepare the Beans: Rinse the Camellia red beans under cold water. Soak them overnight in a large bowl with plenty of water, or use the quick soak method by boiling them for 2 minutes, then letting them sit covered for 1 hour. Drain and set aside.

  2. Chop the Vegetables: Chop all veggies and sit them aside.

  3. Cook the Beans: Add the soaked red beans to the pot.

  4. Add Liquid: Pour in the vegetable broth (or water) and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more liquid if necessary to prevent sticking.

  5. Combine chopped vegetables: Add all your chopped vegetable to your pot.

  6. Add the Sausage: Stir in the sliced vegan Beyond sausage and cook for an additional 3-4 minutes until slightly browned.

  7. Season the Beans: Add the shrimp and crab boil seasoning, Cajun Tony Chachere seasoning, Old Bay seasoning, garlic powder, salt, pepper, and sugar. Stir well to combine.

  8. Cook the Rice: While the beans are cooking, prepare the jasmine rice according to package instructions. Typically, this involves rinsing the rice, then cooking it with 1.5 cups of water for every cup of rice, bringing it to a boil, then reducing to a simmer and covering until fluffy.

  9. Combine and Serve: Once the beans are tender and the flavors have melded together, taste and adjust seasonings if needed. Serve the red beans over a bed of jasmine rice and enjoy!
