Vegan BBQ Ribs

Ingredients

  • Canned Jackfruit (2 cans)

  • 1.25 cups vital wheat gluten + more as needed

  • 3 tbsp nutritional yeast

  • 1 tbsp sweet smoked paprika

  • 1 tbsp onion powder

  • 1 tsp garlic powder

  • 1 tsp mustard powder

  • 1/2 tsp red chili flakes

  • @iamtabithabrown Sunshine seasoning!

  • 2 tsp minced garlic

  • 3/4 cup low sodium vegetable stock

  • 3 tbsp liquid aminos

  • 1 cup BBQ sauce + more for dipping

  • 2 leaves bay (feel free to add more)

  • 1/3 cup fresh chives

  • 1 tsp liquid smoke (optional, only if you want smoky flavor)

  • Sea salt + black pepper to taste (1/2 tsp each)


Instructions:

  1. Add canned jackfruit to a boiling pot along with bay leaves. Let it simmer for a few minutes to infuse the flavor.

  2. Drain and rinse the jackfruit. Remove the seeds and shred the jackfruit with your hands or a fork to create a pulled texture.

  3. In a mixing bowl, combine the shredded jackfruit with vital wheat gluten, nutritional yeast, sweet smoked paprika, onion powder, garlic powder, mustard powder, red chili flakes, and Sunshine seasoning.

  4. Add the minced garlic, vegetable stock, liquid aminos, and liquid smoke (if using) to the dry ingredients. Mix. If the mixture is too wet, add more vital wheat gluten as needed.

  5. Once well mixed, knead it for a few minutes until it becomes elastic.

  6. Shape the mixture into a rectangle shape and then cut into rib-like structures or patties and place them on a baking sheet lined with parchment paper.

  7. Preheat your oven to 375°F (190°C) and bake the ribs for 25-30 minutes, flipping halfway through to ensure even cooking.

  8. After baking, remove the ribs from the oven and brush them generously with BBQ sauce.

  9. Return the ribs to the oven and bake for an additional 10-15 minutes, allowing the BBQ sauce to caramelize.

  10. Once done, remove from the oven and let them cool slightly. Garnish with fresh chives and serve with extra BBQ sauce for dipping.
