For the Vegan Chicken Alfredo
Lion's Mane Mushroom: 2 cups, sliced
Lemon Pepper Seasoning: 1 tablespoon
Lemon Juice: 2 tablespoons
Garlic and Herb Seasoning: 1 teaspoon
Thyme: 1 teaspoon, dried
Sage: 1 teaspoon, dried
Rosemary: 1 teaspoon, dried
Garlic Powder: 1 teaspoon
White Wine: ½ cup
For the Cashew Sauce
Cashews: 1 cup, soaked for 4 hours
Oat Milk: 1 cup
Rice Water: ½ cup
Ginger: 1 tablespoon, minced
Roasted Red Peppers: ½ cup
Roasted Red Onions: ½ cup
Lemon Grass Puree: 1 tablespoon
Tamari: 2 tablespoons
Garlic: 2 cloves, minced
Coconut: ½ cup, shredded (unsweetened)
For the Pasta
Tagliatelle Pasta: 8 ounces
Cajun Seasoning: 1 teaspoon
Preparation Steps
In a skillet, sauté and flatten the Lion's Mane mushrooms with lemon pepper seasoning, garlic and herb seasoning, thyme, sage, rosemary, garlic powder, and white wine until the mushrooms are tender and flavorful.Cook the tagliatelle pasta according to package instructions. Drain and set aside.
In a blender, combine the soaked cashews, oat milk, rice water, ginger, roasted red peppers, roasted red onions, lemon grass puree, tamari, garlic, and shredded coconut. Blend until smooth and creamy.
Toss the cooked tagliatelle pasta with the cashew sauce mixture, adding cajun seasoning for an extra kick.
Add the sliced lion's mane mushroom with the cashew sauce and pasta, and add lemon juice to taste.
Serve hot and enjoy your well-seasoned vegan chicken alfredo!
