Vegan Meatloaf

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 cup breadcrumbs

  • 2 tablespoons flax seeds (ground) mixed with 6 tablespoons water (flax egg)

  • 1/4 cup fresh parsley, chopped

  • 1 medium onion, finely chopped

  • 3 cloves minced garlic

  • 1/2 cup ketchup (plus more for topping)

  • 2 tablespoons liquid aminos

  • 2 tablespoons chopped onion flakes

  • 1 cup carrots, grated

  • 2 tablespoons soy sauce

  • 1/2 cup oat milk

Instructions

  1. Preheat your oven to 350°F (175°C).

  2. In a food processor, add the chickpeas, the breadcrumbs, chopped parsley, chopped onion, minced garlic, grated carrots, flax seeds, ketchup, liquid aminos, chopped onion flakes, soy sauce, and oat milk.

  3. Transfer the mixture into a greased loaf pan, pressing it down firmly to shape it into a loaf.

  4. Spread additional ketchup on top of the loaf for extra flavor.

  5. Bake in the preheated oven for 45-50 minutes, or until the top is firm and slightly browned.

  6. Allow the meatloaf to cool for about 10 minutes before slicing and serving.
