Vegan Shrimp Po-Boy

Ingredients:

Seasoning:

  • ✔️ 2½ teaspoons kosher salt

  • ✔️ 1 teaspoon cayenne pepper

  • ✔️ 1 teaspoon garlic powder

  • ✔️ 1 teaspoon paprika

  • ✔️ ½ teaspoon dried oregano

  • ✔️ ½ teaspoon dried thyme

  • ✔️ ½ teaspoon freshly ground black pepper

  • ✔️ ½ teaspoon onion powder

  • ✔️ Vegetable oil for frying

  • ✔️ 1½ pounds medium vegan shrimp

  • ✔️ 1 cup vegan buttermilk (almond milk and splash of lemon juice)

Dry batter:

  • ✔️ 1½ cups all-purpose flour

  • ✔️ 1 cup cornmeal

Sandwich:

  • ✔️ French roll bread

  • ✔️ Bitchin Sauce

  • ✔️ Shredded iceberg lettuce

  • ✔️ Sliced tomatoes

  • ✔️ Dill pickles

  • ✔️ Vegan Cheese Sauce (follow your heart cheese, nutritional yeast, almond milk, season to your liking on the stove)

Optional:

✔️ Crystals hot sauce


Instructions:

Step 1: Prepare the Seasoning

In a small bowl, combine the following ingredients to create your seasoning mix:

  • 2½ teaspoons kosher salt

  • 1 teaspoon cayenne pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • ½ teaspoon dried oregano

  • ½ teaspoon dried thyme

  • ½ teaspoon freshly ground black pepper

  • ½ teaspoon onion powder

Step 2: Prepare the Vegan Shrimp

In a shallow bowl, pour 1 cup of vegan buttermilk (almond milk mixed with a splash of lemon juice). Dip the 1½ pounds of medium vegan shrimp into the buttermilk, ensuring they are fully coated.

Step 3: Create the Dry Batter

In another bowl, mix together:

  • 1½ cups all-purpose flour

  • 1 cup cornmeal

Add the prepared seasoning mix to the dry batter and stir until well combined.

Step 4: Coat the Vegan Shrimp

Take the coated vegan shrimp from the buttermilk and dredge them in the dry batter mixture until they are fully covered.

Step 5: Fry the Shrimp

In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the battered vegan shrimp in batches, frying until golden brown and crispy, about 3-4 minutes on each side. Remove and place on paper towels to drain excess oil.

Step 6: Assemble the Sandwich

Take a piece of French roll bread and spread a generous amount of Bitchin Sauce on one side. Layer with:

  • Shredded iceberg lettuce

  • Sliced tomatoes

  • Dill pickles

  • Fried vegan shrimp

  • Vegan Cheese Sauce (made from Follow Your Heart cheese, nutritional yeast, almond milk, seasoned to your liking)

Top with the other half of the French roll.

Step 7: Serve

Enjoy your vegan shrimp sandwich with optional crystals hot sauce for an extra kick!
