Steak Ingredients:
Canned Chickpeas - 1 cup (drained and rinsed)
Nutritional Yeast - 1/4 cup
Garlic Powder - 1 teaspoon
Onion Powder - 1 teaspoon
Cumin - 1 teaspoon
Ground Coriander - 1 teaspoon
Oregano - 1 teaspoon
Tomato Paste - 2 tablespoons
Paprika - 1 teaspoon
Black Pepper - 1/2 teaspoon
Dijon Mustard - 1 tablespoon
Liquid Smoke - 1 teaspoon
Vegetable Stock - 1/2 cup
Vital Wheat Gluten - 1 cup
Marinade Ingredients:
Soy Sauce - 1/4 cup
Paprika - 1 teaspoon
Light Brown Sugar - 2 tablespoons
Tomato Paste - 1 tablespoon
Liquid Smoke - 1 teaspoon
Instructions to Create Vegan Steak:
Prepare the Chickpea Mixture: Start by adding the drained and rinsed canned chickpeas and seasonings—nutritional yeast, garlic powder, onion powder, cumin, ground coriander, oregano, tomato paste, paprika, black pepper, Dijon mustard, liquid smoke, and vegetable broth—into a food processor. Blend until the mixture is well combined but still slightly chunky.
Add Vital Wheat Gluten: Transfer the chickpea mixture to a large mixing bowl. Gradually stir in the vital wheat gluten until a dough forms, continue adding vegetable broth if consistency is too thick. Knead the dough for about 3-5 minutes until it’s nice and elastic.
Shape the Steak: Divide the dough into steak-shaped portions. Flatten each piece to resemble a steak and set them aside for the next step.
Prepare the Marinade: In a separate bowl, whisk together the soy sauce, paprika, light brown sugar, tomato paste, and liquid smoke until well combined. This is where the magic happens!
Marinate the Steaks: Place your steak creations in a shallow dish and pour the marinade over them. Make sure each one is covered in flavor! Cover and refrigerate for at least 30 minutes to let those flavors soak in.
Cook the Steaks: Fire up your skillet or grill over medium-high heat! Remove the steaks from the marinade, letting any excess drip off. Cook them for about 4-5 minutes on each side until they’re golden brown with beautiful grill marks. Feel free to baste with leftover marinade while cooking for extra flavor!
Serve: Once cooked, let the steaks rest for a few minutes. Serve warm with your favorite sides and enjoy the deliciousness!
