Vegan Steak Bites

Ingredients

  • 2 can chickpeas (drained and rinsed)

  • 1 1/2 can tomato paste

  • 1/4 cup nutritional yeast

  • 1 cup steak marinade

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 cup vital wheat gluten

  • 1 cup vegetable broth

  • 1 tablespoon Dijon mustard

  • 1 teaspoon smoked paprika

Instructions

  1. Prepare the Mixture: In a blender, add chickpea, tomato paste, nutritional yeast, garlic powder, onion powder, vegetable broth, dijon mustard, and smoked paprika. Blend until well mixed.

  2. Add Vital Wheat Gluten: Add mixture to a bowl, then stir in the vital wheat gluten and mix until fully incorporated. Gradually add the vegetable broth until the mixture forms a dough.

  3. Shape the Bites: Divide the dough into small bite-sized pieces and shape them into cubes or squares.

  4. Marinade over night: Add the bite size pieces to a bowl and pour in steak marinade, place in refrigerator over night or for 5 hours.

  5. Steam the Mixture: Next, put the shaped bites into a steaming basket and steam over boiling water for about 15-20 minutes, or until firm.

  6. Air Fry for a Crust: Preheat the air fryer to 400°F (200°C). Place the steamed bites in the air fryer basket and air fry for about 10 minutes, shaking halfway through, until they are golden brown and crispy.

  7. Grill: Now put the bite sized pieces on a grill to cook through even more, and grill marks are present.

  8. Serve: Remove from the grill and let cool slightly. Serve warm and enjoy your chickpea steak bites!
